Spicing Up Tradition on National Carrot Cake Day

Today we celebrate National Carrot Cake Day! And what better way to celebrate than with a Solar recipe?! We’re bringing you our tried and true recipe to celebrate the rich, moist, and spiced goodness of this beloved dessert. The aromatic blend of spices lends a warm and comforting flavor profile, while the addition of chopped nuts provides a delightful texture contrast. Top this cake off with a generous layer of cream cheese frosting and your carrot cake achieves the perfect balance of sweetness and tanginess. 

And while we don’t know who thought to put a vegetable in a cake, we’re not mad. If you want to take this cake to the next level, swap out some of the oil for an infused and elevated experience. 

Solar’s Carrot Cake

Sheet Cake

Ingredients:

  • 1 c All-purpose flour
  • ½ c granulated sugar
  • ½ c brown sugar
  • ½ t baking powder
  • ¼ t baking soda
  • ½ t ground cinnamon
  • ¼ t ground nutmeg
  • ¼ t salt
  • ½ c vegetable oil
  • 1 t vanilla extract
  • 2 large eggs
  • 1 ½ c grated carrots
  • ¼ c chopped walnuts (optional)
  • Orange zest (optiona)

Solar’s Cream Cheese Frosting

Ingredients:

  • 8 oz cream cheese (1 block, softened)
  • ½ c butter (1 stick, softened)
  • 3 c powdered sugar
  • 1 t vanilla extract

Instructions:

  1. Preheat your oven to 350F, grease a 9in square baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  3. In a large bowl whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the grated carrots and chopped nuts (if using).
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for approximately 25-30 minutes.
  8. While the cake is baking/cooling prepare the cream cheese frosting; beat together the softened cream cheese and butter. Add in the powdered sugar and vanilla extract and beat until smooth and creamy.
  9. Once the cake has cooled, spread the frosting over the top, finish with orange zest or enjoy as is!
